Bread can mold quickly – especially now. We explain why you should currently pay close attention to storage.
"Too good for the bin!" is an initiative of the Federal Ministry of Food and Agriculture (BMEL), which has been pointing out the high rate of throwaway bread for years. According to the initiators, around six million tons of food end up in the garbage every year in private households alone. Discarded fruit and vegetables (about a third) and prepared meals are followed by bread and baked goods among the foods that most often end up in the bin.
Another reason, apart from the fact that the bread is literally "stale" after several days: Bread that has been stored incorrectly molds relatively quickly – and this is especially true on warm, humid summer days. Because this climate is almost predestined for the formation of mold.

In this way you can prevent the formation of mold

If bread starts to get moldy, there is only one thing left to do: put it in the bin! Because even if only a few small spots affected by mold are recognizable: the mold could have long since spread throughout the entire loaf of bread; often the mold spores are not even visible – and the bread is still "mouldy". That's why you shouldn't let it get that far.
And the "right place to store it" is just as important as cleanliness, says "Too good to throw in the bin!" The experts recommend: "It should be airy and dry." Because if the environment is too humid and the air cannot circulate, the risk of water collecting and mold growing increases. Bread crocks made of clay or stone, metal boxes or bakery bags are best suited for proper storage.
Alternative bread maker: produce your bread just in time
It is often due to the size of the "bread units" that we (have to) buy that bread is one of the most thrown away foods, because we usually buy bread – often already pre-cut – in a quantity/size that is not intended for immediate consumption designed, but rather should last a few days. Consequence: The bread dries out, becomes hard – or even worse, as described above – begins to mold.
You can solve the problem with the help of a bread maker. Because if you bake your own bread, you can determine the time and size of the completion yourself to a certain extent. Most bread makers include programs for different sizes, including smaller ones.
Instead of a giant loaf, which is enough for several bread meals, a small 500g loaf can be made that can be almost completely eaten up with several people over an evening snack (Swabian!). So you can enjoy fresh bread at the same time – and don't have to throw anything away later. Another advantage of a bread maker: Anyone who bakes their own bread knows about the ingredients it contains. The bread production is easy and the ingredients can be dosed exactly in most cases.
